Sometimes you just want something comforting and simple,without sacrificing flavour,a nursery type dish,tricky to achieve when it's nearly 35C!When you think about it most nursery comfort dishes for your average Englishman anyway hark back to cold Winters days,Shepherds Pie,Bangers and Mash,but in this heat that would be just torture.
Chicken in BBQ sauce perfect,can happily cook on the barbecue whilst I enjoy a beer straight from the freezer at the point just before it freezes in a frosted glass,heaven.
Start by making a simple BBQ sauce put a good squirt of good old fashioned tomato ketchup in a bowl big enough to marinate the chicken breast,a good swig of light soy sauce a bigger glug of Lee and Perrins Worcestershire sauce a splash or two of Tobasco ,I use quite a lot because I like it spicy,a squirt of Honey,Squeeze the juice of half a lemon just through your fingers to catch any pips, a small glug of Olive oil,Salt and Pepper and give it a good stir.
Taste it,and adjust, if it needs more soy or tabasco add it.
Add your chicken breasts, mix it all together with your fingers cover with cling film and put in the fridge for a couple of hours.
Cooking is simple,get the BBQ coals really hot,so they are just a glowing grey colour,and put on the BBQ couple of minutes each side,they will sizzle and blacken,thats fine,now I finish off in a pre heated oven at 200' for 20 minutes.I have tried on the BBQ the whole way but the sauce burns too much to my taste because of the honey,I served simply with some rice and four or five of the most refreshing beers!
This is comforting. That's for sure! ...and this is my kind of meal. YUM!
